Ingredients:
Rice:
- White rice
- Chicken broth

Shrimp:
- 1lb shrimp, uncooked and peeled (I use the frozen Costco Kirkland shrimp)

Instructions:
- Cook rice based on package instructions (substitute water with chicken broth and add butter based on package instructions). I usually cook 2 cups california calrose rice from Costco, 2 1/2 cups chicken broth, and 2 Tbs butter) which is about 4-6 servings).
- Heat a non-stick pan or cast iron skillet on medium heat and coat with a light drizzle of oil (2 Tbs).
- Combine the shrimp (1 lb), garlic (1 clove), spices (1/2 tsp of salt, onion powder, thyme, oregano, and black pepper), and cayenne pepper (1/4 tsp).
- Once the skillet is hot, add the shrimp (don’t overcrowd the pan) and cook 2 minutes per side (or until shrimp is golden brown and cooked through).
- Divide rice into bowls, add shrimp on top, and any additional toppings.
- Drizzle with lime juice and enjoy!
