
Ingredients:
- 1/2 cup (1 stick) softened butter (I used Earth Balance)
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large or two small eggs
- 2 tsp vanilla extract
- 1 cup gluten-free flour (Bob’s Red Mill 1 to 1)
- 1/2 tsp baking soda
- Pinch of salt
- Pinch of nutmeg
- 1 tsp cinnamon
- 1 1/2 cups old fashioned oats
- 3/4 cup raisins
Instructions:
- Preheat oven to 350 degrees Fahrenheit.
- Cream butter (1/2 cup), brown sugar (1/2 cup), granulated sugar (1/4 cup) for 2-3 minutes.
- Add 1 large egg and 2 tsp vanilla extract to the sugar mixture and combine until well incorporated.
- In a separate bowl mix dry ingredients (1 cup flour, 1/2 tsp baking soda, pinch of salt, pinch of nutmeg, 1 tsp cinnamon).
- Mix dry ingredients into wet ingredients until just combined.
- Stir in oats (1 1/2 cups) and raisins (3/4 cup).
- Using a cookie scoop or spoon, drop dough balls onto baking sheet 2 inches apart.
- Bake for 9-11 minutes.
