The Best Gluten & Dairy-Free Oatmeal Raisin Cookies

Ingredients:

  • 1/2 cup (1 stick) softened butter (I used Earth Balance)
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large or two small eggs
  • 2 tsp vanilla extract
  • 1 cup gluten-free flour (Bob’s Red Mill 1 to 1)
  • 1/2 tsp baking soda
  • Pinch of salt
  • Pinch of nutmeg
  • 1 tsp cinnamon
  • 1 1/2 cups old fashioned oats
  • 3/4 cup raisins

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Cream butter (1/2 cup), brown sugar (1/2 cup), granulated sugar (1/4 cup) for 2-3 minutes.
  3. Add 1 large egg and 2 tsp vanilla extract to the sugar mixture and combine until well incorporated.
  4. In a separate bowl mix dry ingredients (1 cup flour, 1/2 tsp baking soda, pinch of salt, pinch of nutmeg, 1 tsp cinnamon).
  5. Mix dry ingredients into wet ingredients until just combined.
  6. Stir in oats (1 1/2 cups) and raisins (3/4 cup).
  7. Using a cookie scoop or spoon, drop dough balls onto baking sheet 2 inches apart.
  8. Bake for 9-11 minutes.
  9. Enjoy!
